A keto gravy is full of savory flavor and buttery goodness with fewer carbs than the classic sauce. It’s the perfect diet-friendly topping for all of your keto Thanksgiving dishes, like mashed cauliflower, keto stuffing, and of course roasted turkey.

Gravy is typically thickened with flour or cornstarch, both of which are high in carbs and starch. Some keto gravies are thickened with alternative flours like coconut or almond flour. Both of these can be used, but they do contain their own flavor, which may interfere with the taste of the gravy. They can also lead to graininess. For this recipe, egg yolks act as a thickener, similar to how egg yolks thicken mayonnaise. They add smooth richness without taking away from gravy’s natural flavor.

The pan drippings from preparing your turkey are the perfect base for this gravy. The fat and crispy brown bits all add to the texture of the sauce. If you use the drippings, you may not need to add salt to the gravy. Taste and season accordingly. Even if you use drippings, you will probably need to supplement some of the liquid with chicken or beef broth so that you have enough to create the gravy. 

Ingredients

  • 1 tablespoon olive oil

  • 1 cup onion, minced

  • 2 cups turkey broth, from pan drippings, plus extra broth or water to equal 2 cups

  • 2 large egg yolks

  • 1/4 cup cold water

  • 2 teaspoons powdered gelatin

  • 1 teaspoon freshly ground black pepper

  • 2 tablespoons salted butter, optional

Steps to Make It

  1. Gather the ingredients.

  2. Add the olive oil to a sauté pan and heat on medium-high heat. Add the minced onion and sauté until translucent and soft.

  3. Add the broth to the pan and heat for about five minutes. Add the contents to a blender and puree until completely smooth.

  4. Temper the egg yolks with the hot broth by adding a little bit of the hot broth to the egg yolks while whisking vigorously. Keep adding the broth until it is incorporated into the eggs.

  5. Soften the gelatin with the cold water. Stir until the gelatin dissolves.

  6. Add the gravy back to the blender along with the gelatin and pepper. Blend until completely smooth. Then blend for another 2 minutes or until the gravy is slightly thickened. Blend in the butter if you wish.

  7. Serve the gravy over your favorite turkey or mashed cauliflower.

Use Caution When Blending Hot Ingredients

Steam expands quickly in a blender, and can cause ingredients to splatter everywhere or cause burns. To prevent this, fill the blender only one-third of the way up, vent the top, and cover with a folded kitchen towel while blending.

Tips

  • The gelatin also helps to thicken the sauce. If you want the gravy to be even creamier, allow the gravy to cool. Then gently reheat the gravy when you are ready to serve.
  • The addition of the butter can also help thicken the sauce and adds richness.
  • This gravy is light in color due to the lightness of the stock. If you wish to make it darker, then brown some of the drippings before starting the sauce.
